Garlicky Chicken Soup with Avocado

Garlicky Chicken Soup with Avocado

Here’s another easy way to do an easy chicken soup, with a completely different flavor and feel from the ginger chicken soup I posted the other day.

Ingredients:

  • chicken stock
  • chicken reserved from making stock, or leftover from a roasted chicken
  • mushrooms
  • cauliflower
  • garlic
  • schmaltz (chicken fat) or ghee
  • salt
  • avocado (optional)

Directions:

  1. Wash and slice your mushrooms. Wash and cut your cauliflower into spoon sized florets. Peel and chop garlic finely or press it.
  2. Put schmaltz or ghee in the pot and turn up the heat to medium.
  3. Add the mushrooms, garlic, and salt. Cook until the mushrooms are browned. (If you are in the early stages of GAPS, do not brown your mushrooms, just cook them a bit to blend the flavors).
  4. Add your chicken stock and cauliflower.
  5. Turn the heat up and bring to a low boil, and simmer until cauliflower is cooked. (If you do not have leftover chicken, add raw chicken to the pot with the cauliflower and simmer until it is cooked through.) Chop up your cooked leftover chicken and add to the pot. When the chicken is heated through, serve. Garnish with avocado slices.

      Well hello, neighbor! You’re not far at all :) I love cauliflower in soup. It’s not quite as amazing as when it’s roasted, but it really does work well in soup!

  • Hmmmm. Not sure about this, but it’s interesting. My habnusd was diagnosed with celiac at age 37. His birthday is in March. His father, who also has celiac, was born in December. Our children never went through the biopsies but were found to be reacting to gluten (we say gluten sensitive) and birthdays are in January and July. My birthday is in September, and I’m also gluten sensitive/intolerant but didn’t go through biopsy to get an official celiac diagnosis. (A test showing I was reacting was enough for me!)
