Transforming Leftovers – Nettle Sausage Scramble

Yesterday, Kelsy made up sausage patties with nettles for the kids. I took several for my lunch. There were just a couple left over.

This morning, I didn’t feel like making a big production out of breakfast. But sausage again didn’t seem appetizing, and a plain old egg wasn’t going to cut it. Kelsy had just eaten the last of the turnip greens and pork she’d made the other day. I was sad, since it had such great flavor. Lucky for me, there was still a tiny bit of broth and fat in the container. I put the last of it in the pan along with the sausage, and heated it up, chopping the sausage into little bits. Then I beat an egg and added that to the mix.

A couple minutes in the pan, and I had a flavorful scramble that felt totally different from all the other dishes! I garnished it with a dollop of homemade yogurt, some baked squash (Kelsy usually has these treats on hand for just such an occasion). A few green onions that didn’t get used up the other day topped it all off. Now that’s what I call breakfast!
